The Pink salt is Prague Powder #1.  It contains mostly salt and a bit of Sodium Nitrite.  It is also called Instacure.  The Tenderquick is basically the same thing I believe (I have never used it).  The bear roast should turn out excellent.  It is my favorite to make the corned roast out of all big game meat.

I am not a fan of bear meat at all.  But this seems like a great idea. 

Also does anyone know what the stuff is called that you put in the brine that keeps the meat from turning grey?  And where did you buy it at?
. I believe that's what the Morton tender quick salt is for.  It's a meat cure.  There is also the pink salt, that does the same thing.  Not sure what it's called though.

it was the same price i paid for a 5oz jar of it 1 year ago, took me a year to go through it...but I thought i'd better buy in bulk.

  Tonight Was The Night!!!!!  This Meat Was So Good.  I Honestly Think It Was Better Than Corned Beef!.  If You Have Never Tried It, I Recommend Doing So If You Like Corned Beef.
  I Have Not Cooked A Regular Roast Yet, But Being The First Bear Meat In The House We Want To Try Eating It Every Way We Can.  I Don't Regret The Corned Recipie At All.

My huntin buddy does this and puts it into a big batch of beans and we have a corned bear and beans feast at deer camp. It is Awesome.
