The high acidity in brewed coffee comes with the application of heat in the brew process. When coffee is steeped cold, it prevents most the acids from being extracted out of the raw coffee. One pound coffee per gallon) I like to run .75/1 brewed for 24hrs at 45 degrees. You'll want to refrigerate while steeping. If you are able, use filtered water to help the shelf life and help keep the microbes under 11,000.
