Does the bacon help keep the pork loin from drying out? I've had really poor results trying to smoke whole loins. Even with injecting, wrapping and letting it stand in a hot box the loins always seem to turn out dry when I smoke them.

Having them in the pan's is crucial in my opinion.Most just lay on the rack to smoke and almost always dries out.  :twocents:

:yeah:Mine is dry even with bacon, but white meat seems always dry to me.  Not a white meat fan, pork has to be cut thin, then it's more juicy.

Ive tried them all, nothing but issues. i have the austin XL m 3walmart on sale now $460 + $58 for 3 yr warranty. it works flawless, excellent options, no hot spots, amazing machine, extremely happy! can even control auger speed for thicker or lighter smoke, and can cold smoke down to 80 degrees :tup: beyond thrilled with it and im a died in the wool coal and wood burner. nice to not babysit it all day.

Then it's too hot or cooking too long 👍
