Bad meat recipes?
« on: May 17, 2021, 05:32:16 PM »
First time it has ever happened to me. My deer I got last year is the worst meat I have ever had. I have tried a few diffrent ways to cover up taste but it has been hard.
Any marinades or anything you have tried to help?
This is mainly with the hamburger stuff. I am almost ready to make it pepperoni  but want to try one last shot at something.
The wife and kids normally have no problem with the game meat I bring home but this is uneatable  to them.
Thanks in advance
If its brown knock it down

Pepperoni.

I use the Emeril Lagasse andouille sausage recipe for strong tasting geese, especially for the ones during the early season. You could maybe give that a try.
What country can preserve it's liberties if their rulers are not warned from time to time that their people preserve the spirit of resistance? Let them take arms. The remedy is to set them right as to facts, pardon & pacify them. What signify a few lives lost in a century or two? The tree of liberty must be refreshed from time to time with the blood of patriots & tyrants.

I have no cure for that, I wish I did. Helped a buddy get out a very rutted bull on Vancouver Island, he sent me home with a frozen 1/4, it smelled bad even frozen. We had it skinned and frozen within a day so I can say it was not us. Even the dogs stayed away from it cooked. All I can say is good luck.

Taste is often indictive of other issues. If it's that bad I would  consider why. That's why we always cook some unseasoned right off the bat. See what we are dealing with.

If it's just extra gamey jalapeno cheddar summer sausage cures all... mostly.

Agree. If only the burger is bad smelling/tasting that’s very odd. Is there a chance that bad fat was mixed in?  Another reason why to NEVER mix suet/fat in your wild game, especially if you didn’t do it yourself.

Because of work schedule and time restraints I had it taken to a butcher. In the feild it was never over 30 and the meat was well taken care of. So maybe something happened with the mix. Like I said it's only the burger

Possibly you got some of your deer and some random gut shot deer?

Sounds like your butcher may do his ground in batches.  Possibly got mixed in with another's meat that was spoiled.

Given the fact a butcher did it and only the burger is funky.....you got rancid suet or someone else nasty mistreated meat.   No saving it....send it to the bottom of the ocean in a crab pot for bait or dump it.   Sucks for sure but that is the sole reason we butcher our own meat....always.  I trust no butchers with my game meat.  Remember you can always freeze the quarters and butcher and grind at a later date.   Not ideal but it works.

I agree with all of the above. Don't feel bad about being wasteful and tossing it. You were respectful of the meat.
