Beaver meat is pretty good if its cooked right.  I've made a lot of summer sausage with mine.

Got some back straps marinating right now in worschestire sauce liquid smoke and salt pepper right now. Hind quarts make a good pulled meat sandwich with bbq sauce. Smoked ribs are good too. Grind with pork fat for some awesome burgers!

Beaver meat makes good pepperoni or should I call it beaveroni.  Just check the liver for spots when you clean it.

I just pressure canned 24 cans worth last week. Used Kinders on a few, the beaver seasoning from meat eater and mastodon. Turned out awesome. I grind the rest as well. We save all the beaver meat through the season and do something good with it. Great table fare

2 pans of mesquite in the little chief smoker, then into the oven with beef broth onions and apple chunks, 8 hours at 300degrees, couldn't even pick it up so tender it fell apart. Pulled beaver sandwiches sooooo good!
