We have been doing a very similar process and recipe. It turns out great and is absolutely delicious. :tup: :tup: It also freezes very well. We vacuum seal it in 1lb packs and freeze it for quick easy meals down the road. Open it up, throw it in a cast iron pan to warm it taste equally as good as when it was fresh off the smoker. |

I got this recipe off of The Bearded Butchers and is how we make them. But when it's cold out they were burning so we started using a large cookie sheet under the wire rack. But sticking them back on the smoker for the last 15 mins makes all the difference. Smoker 250* Using your favorite rub flavoring Coat all sides of cubes let sit for 10 mins Place on racks On the smoker for an hr then spritz with apple juice and apple cider vinegar After the 2nd hour get into the pan Drizzle with honey Coat with Brown Sugar Sliced stick of butter BBQ sauce Wrap pan and back on smoker 1 more hour then onto racks Back on smoker for 15 more minutes |

Sounds delicious I just got our first treager and have been doing basically the same with pork belly but cutting the strips into 1/2 in strips and making pork belly candy |
