Brown Sugar Salmon

Does anyone know a really good brown sugar/soy sauce salmon receipe? Friend of our family made one years ago and I can no longer get in touch with him. Any ideas or receipes would be awesome! :)

Salmon on Foil
Brown sugar / soy to taste (more brown sugar as a glaze helps keep moisture in salmon)
coat salmon liberally.
pull foil together at top
put on barbecue until done

variations -
hazel nut butter
add wortcheshire to the equation
garlic / ginger are good additions to glaze

here's what i do, take some foil and roll up sides to make a shallow tray, lay salmon fillet skin side down on foil, take 1 cup of brown sugar and 1/2-1 can of your favorite beer, mix in a bowl and pour over salmon fillet, cover with another piece of foil and put on the barbie or in the oven for about 12 to 15 minutes.

I make a brine out of brown sugar, salt, and white wine.  I soak it over night.  Goes on a very hot grill, meat side down first, for just a couple of minutes, to sear it.  Turn it over and finish cooking it thru the skin.  I usually will take garlic & melted butter to baste it as I finish it up.

One more variation with the foil boat...

Take mayonaisse and add soy sauce to it until it is an off brown color. Smear this over filet and put it on the grill with all, but a little bit of the top of the foil boat closed. Watch closely and when the mayo starts to boil it should be done. Just watch out you don't get steam burned when checking it. The mayo holds in the moisture and it has a great taste with soy sauce. Used to do this with a fresh red we caught out of the Kenai on the first day there. For variation you can add diced garlic or other spices in. Now I am just wondering about brown sugar.

Mine doesn't use brown sugar but it is very good.

fresh thyme
fresh sage
plain yogurt
butter

Mix them all together in a blender. (I use a magic bullet blender).

Pour this mixture all over the salmon fillets and bake or grille it.

You can use sour cream instead of yogurt and butter.

For smoked salmon:

fresh thyme
fresh sage
smoked salt (1/4 cup) (I get it from whole foods)
put these in a blender and blend well.

use about 4 to 6 lbs of salmon fillets

the smoked salt cuts out the process of actually smoking it

brine overnight in a freezer bag in the fridge and then put the fillet pieces on the dehydrator and dry as needed. I cut the pieces about 4" long and I don't do the last 3" of the tail section. I bake it that night instead because it doesn't do as good as the thicker pieces when dried.

My Bro-In Law uses this Soy Sauce receipe and it is good.

1 – Cube of butter
3-4 Garlic cloves
1 teaspoon of fresh Ginger minced
1 White Onion finely chopped (Walla Walla sweets or Vidalia if available)
3 Tablespoons of soy sauce

Melt 1 cube of butter and add the garlic and ginger and simmer until the onion is soft.
Add the soy sauce and simmer until the butter is clear and the onion has absorbed the soy (about 15 minutes)

Coat the fillet with the sauce and barbeque as usual.

this is the only way i cook salmon now.

1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

marinate for an hour then make a bowl out of tin foil place salmon in and pour over extra liquid and seal cook over medium heat for about 10-15 min depending on size that you use

For what it's worth....

Skin on filet, slice 1/2 inch strips, marinate overnight.

Equal parts soy and water, 1/4-1/3 cup brn sugar per cup liquid, black pepper, a little liquid smoke.

After placing on rack, let glaze a little, sprinkle with onion and garlic powder.

Smoke.
