Hot or Flavored Chicken Wing recipes
« on: January 12, 2010, 05:27:56 PM »
I am looking for some kick butt recipes for chicken wings.  Does not matter if it is hot and spicy or just plain full of flavor, I am looking to try some new ones.

Let's see what ya got.

By my honorable conduct as a hunter let me give a good example and teach new hunters principles of honor, so that each new generation can show respect for their god, other hunters and the animals, and enjoy the dignity of the hunt.

Calling an illegal alien an 'undocumented immigrant' is like calling a drug dealer an 'unlicensed pharmacist'.

Take the wings and sprinkle with garlic powder and mrs. dashes and let them sit over night, then when you go to cook them brush with some olive oil, cook them on the BBQ, and then coat in wing sauce (Texas Pete, Franks + plus melted butter) and then eat. when we do them in the summer they don't make the sauce bowl, everyone just stand around waiting for them to be pulled off the grill.

If you don't want to do the BBQ method then just deep fry them with out a flour coating just coat with salt pepper and a little garlic powder and crushed red pepper flakes, then fry until golden and then coat in wing sauce!

I deep fry the wings without any coating or spices (naked), just the wings until they are golden brown.  When it smells like they are starting to burn they are done.  Then I put a sauce on of the following: ~1/2 cup Crystals Hot Sauce, ~2 Tbsp butter, a couple teaspoons white vinegar and then somes Daves Insanity (as much as you want to handle).  I cool the sauce before putting it on the hot wings.

At deer camp this year I put the naked wings on the fire until they started getting crispy and then put Tabasco Chipotle sauce on them and cooked the sauce in until they were real crisp.  Those were really good.
Look man, some times you just gotta roll the dice

Have tried and tested many wing recipes.
This is one of my favorites from Alton Brown. Easy and very very good!
Try it this superbowl

Ingredients
12 whole chicken wings
3 ounces unsalted butter
1 small clove garlic, minced
1/4 cup hot sauce
1/2 teaspoon kosher salt
Directions
Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.

Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.

Preheat the oven to 425 degrees F.

Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.

While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine.

Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.

for simply hot wings pick up a bottle of Franks Red Hot and follow the directions on the bottle.  when i do this i cut the tips off and seperate the "forearm" from the "upperarm".  get a pile of flour seasone with salt and pepper to taste with a little bit of garlic powder.  roll chicken wing in flour then dip into an egg/milk mixture roll in flour again, place on baking sheet.  i then bake the wings for 20 mins at about 475-500 in the oven on the center rack.  rotating the wings at 10 mins just to make sure each side get crispy.  pour about 3/4 a cup of Franks into a mixing bowl, i add some honey ( sorry cant tell how much i dont really measure) to give it kind of a sweet hot taste. add chicken to bowl toss to coat the wings.  serve with ranch/bluecheese and a cold beverage of choice.

nothing fancy just a good ole hot wing
