Venison Hotdogs

I did 10 pounds of venison hotdogs today I used some premixed seasoning from the sausagemaker I was too lazy to mix up a batch from scratch so I used some trail bologna seasoning and stuffed them into 26mm cellulose casing they are a plastic casing that gets removed after they are smoked I smoked these using hickory they turned out very nice

happyness is a full smoker

I'm going to have to try that too. I've made several batches of sausages of different types this year but have never attempted hotdogs before. Would sure come in handy during the summer camping trips!!

Nice job Huey, those look great.  That's one of my next smoking projects.  Never tried hot dogs before.  A couple questions if you don't mind.  What size plate did you use for the grind?   And, did you emulsify or just mix and stuff?  Thanks in advance.

I used the 4.5mm Plate for the grind and I ground the meat twice then I mixed and stuffed the meat I used a 60/40 mix of pork/venison they turned out very good
happyness is a full smoker
