Hello Everyone

Today i did 15 pounds of cracked pepper and garlic summer sausage with cheese this stuff is awesome I used a kit from Hi Mountain seasonings i mixed 60/40 Pork/Elk meat this stuff tasted great right out of the smoker I have been excited to try this one I am very happy with it I will be doing it again here are the pics


happyness is a full smoker

I have tried the cracked pepper and garlic on jerkey, but not summer sausage :drool: Will have to try it out. Looks nice!

Nice work Huey.  Just got a new shipment in from Butcher-Packer on Friday with a pound of hi-temp cheddar.  Can't wait to try it out.

Looks good!  While I am not a cheese guy, the wife and kids thought it looked great.  A few more posts with pictures like that and I just might be able to talk the little lady into a grinder and smoker! :chuckle:  Thanks for the post and pics of your work.  Michael

The only kind of summer sausage I can make is either beef or game tag sausage  :'(

I got the kit here in Forks they sell it in our local store its made by Hi Mtn jerky seasoning so you could buy it online I think wholesale sports sells it too
