rub for chicken? need to break in my new offset firebox smoker/bbq...

I think you are over thinking this. To season the grill you need two things....meat and smoke....

Take your chicken, dump it in a brine safe pot....addd water, kosher salt, brown sugar, and some garlic. Soak those tasty bits of flightless bird for a couple hours to overnight.......throw them in the grill with med direct and inderect heat......add smoke....let it go nice slow....then enjoy.

You will have a nicely seasoned grill that is ready for some serious cooking.

Hey jeep I think you want your bbq to run solo for the first few hours to season and get rid of the chem smell  :twocents:. After that brinening is always good for chicks enjoy

I agree a must,and brining chicken and turkey turns out the best for me
