Most the bear peels you'll find are on much smaller trees than that John. Like the ones in rasbos pictures, smaller reprod maybe 15 years old or so. The bark is a lot thinner on those age trees and in the spring peels off really easily. Tastes kinda like a carrot, a good sweet one, not the bark itself but the softwood on the tree and backside of the bark.
