Not sure yet if I am smoking a pork butt or doing taco soup.  Either way there will be more grub than any human needs to have in front of them.   :puke:

Take ground beef and a little pork sausage and mix them together. Put them in the crockpot with bbq sauce and grape jelly. They are amazing.

Meat balls if I can find a good recipe. Anyone want to post one up?  :hello:

1.5lb ground elk
1.5lb ground venison
2lbs ground pork

Combine with 3 eggs, 1 minced sweet onion, 1 diced small bunch parsley (I prefer cilantro), 1.5 cups breadcrumbs.

If it is too wet add more breadcrumbs, too dry a couple tablespoons of water.

Kicked up add-ons:  garlic, jalapeņo, small chunk of mozzarella on the inside.

Beat 1-2 eggs with 3-4 tablespoons of water in a bowl.  Set aside (egg wash)

Make meatballs to size you want (I aim for 1-1.5" diameter)

Fill a small bowl with cornstarch (dredge)

Fill another bowl with breadcrumbs.

To cook:

Dredge meatballs in cornstarch, then egg wash then breadcrumbs.

Brown in skillet in 1.5-2" olive oil until brown on all sides.

Place in baking pan with sides and bake at 350 degrees until internal temp reaches 160..

Variations:  cover in marinara to make Italian style or other sauces.

I cook large batches of these without sauce allow to cool then freeze in zip locks.  Quick dinners for the wife and kids when I am away.  Also quick way to speed make sauce and heat them back up.

If you don't have elk/venison use ground beef (at least 10% fat), and veal.

Blaster....can I get a recipe for those? I seem to have no luck making sweet potatoe fries or chips. Don't know what I'm doing wrong but they just never get crispy.

All about the double fry....

Gotta slice thin, put in 375 oil and cook for like 30-50 seconds, remove and let rest for 5 minutes or so then fry again and you'll have crisp chips everytime.  (same with fries as you'll get soft centers and good crunch outside).

I'll coyote hunting most likely. I don't like sports and hate to waste a good day for being outside doing something fun........

I'll be having ham and swiss cheese sammich on sourdough bread when I get back.

Beer of choice: Labatt BLUE

(https://hunting-washington.com/smf/proxy.php?request=http%3A%2F%2Fwww.labatt.com%2Fassets%2Fimages%2Fbrands_badge_blue.jpg&hash=b2d7d2b7c65aa513ba358b39feb75a67494dd05b)

I have no idea why this is not a universal thing.

Decent beer; and the superstitious side of me wants to believe it works outstandingly well. Now if it only came in Lime Green...
