Title: Beer Joint Eggs

Years ago I remember tagging along with my dad to the Bar. They had this gallon glass jar with hard boiled eggs, spicy, hot. Anybody have any recipe ideas to re-create something similar?

Real easy.  This is how I make them.  Take peeled hard boiled eggs and but them in a big glass jug and dump in enough jars of pickled jalapenos (I use my homemade ones) with liquid to cover the eggs.  Let sit in the fridge for a couple weeks.  If you don't have jars of pickled jalapenos, slice up some raw ones and boil in a pickling liquid of 50-50 water and vinegar for 5 minutes or so.  Add a 1/2 tsp of canning salt per pint of this liquid and use like the jarred ones.

This is funny, every little bar where I grew up in Wisconsin has a jug of these.  I love them.  They'll keep in the fridge almost indefinitely.  They get better with age too.

If you want them real hot, fire a couple chopped up habaneros in the brine.  I would guess some garlic would be good in the brine too.  Maybe some pickling spice too?

My dad used to do them with left over pickled beet juice from pickling beets.  Made a helluva pretty pickled egg. :drool:

I'll be honest, I've never had the nerve to eat one of those things. They get more scary when there are only one or two left in the jug, you know they've been sitting there for some time.

No way, they get better with age.  Besides, when the last one's gone, you never throw the brine away, you just add more eggs.

I have a glass jar that holds 18 eggs, they are soaking now with Jalapeno's, garlic, and some pickling spice, vinegar/water. My wife had the odd look on her face when I filled the jar, she thought I was making a big batch of egg salad LOL.

Here's how I used to do them,

buy peppercinni(however you spellit?) jug from Costco. Put about 2/3 of the peppers in another empty jar or toss them. I would never eat a coscto size jar of them so I just usually trash them. Toss in hardboiled eggs

I add about 2 tablespoons of black pepper and a jar of minced garlic and an onion if there is room and/or whatever else you like. The yellow pickled pepper juice is awesome with eggs. Just enough heat for me. mmmm-tasty- let them soak for a couple weeks- I have a hard time waiting once I've made them, usually start eating them the next day.

I had one today for lunch as a matter of fact. In the jalapeno liquid. I am going to experiment with some flavors on the next batch.

Or you can rome around the rural towns on the outskirts of Spokane, and you should be able to find them in Reardan, Harrington, Wilbur, Rockford, Spirit Lake, etc.

You are best to make sure the taverns stay in business through your egg purchases and half dozen beers to wash them down.

thinking about it made me want a batch. Always a good snack at work or at home whatever- I think I'll go to costco. tomorrow is payday afterall, pick up a jar and some TP.

Hmmm, I am finding the idea of eating pickeled eggs intriguing and revolting in equal parts. Now I am curious what they taste like, but not sure I could get the nerve to try making some of my own to try them. ;)

When I was down in GA going to Collage and working at the MCLB one of the mechanics knew a gal that use to pickle Quail eggs.  We use to buy them in a quart jar and keep them in our tool boxes at work.   :drool:

Got a thought. I'm sure we all frequent or know a restuarant. I'm gonna go ask a place or two to save me a jar of juice once the peppers are gone. Not sure I could stomach eating a whole container of hot mamas then put eggs in it and eat those too! man- that would be fiercely unpleasant for anyone to spend any time within a 100' radius....

they still taste like egg but, the really good flavor soaks in and makes them not so bland. The actual tavern pickled eggs have a real rubbery texture and are a bit of an acquired taste. When you make them homemade, make a quick egg salad sammich with them, put them on salads, toast anything is better!

If you have XP then you have Paint, just go and right klik on the picture. Say open with PAINT, then when it pops up go to IMAGE, hit resize/skew.

It will show 100 horizontal and 100 vertical just hilite those numbers and change them to 35 and it will rezize it, then just hit save and you picture is now ready to be shown...

Ok, I have my boiled eggs in the brine.  I used the same brine from my Costco super mammoth olives which is a Jalapeno/Garlic brine.  My question is, do you have to keep the eggs refrigerated? :dunno:  On the jar of the Olives, it says to refrigerate after opening.  Thats all I need is to get sick eating my nice pickled eggs I just made up. :chuckle: :chuckle:  Thanks.  John

Pickled eggs are excellent with cheap beer, dried apricots and smoked oysters.  Of course, with the rations, one soldier could smoke the entire Taliban out of a cave complex.

If you really want to get your hind end a smokin', dump a pile of onions in with the eggs and eat the eggs with the onions.  Wash 'er down with some PBR and you're going to be making some enemies.

I always keep mine in the fridge. Not sure if you need to but, it makes my stomach feel better knowing at minimum it was refridgerated for a couple months....

 You guys are all on the right track, but make sure you add some veggies, carrot slices, whole garlic, onions, celery, olives, jalapenos...You get the idea.  The veggies turn out great, and go along very well with the eggs.  I'd have to say that my favorite pickled egg accompniment would have to be Jalpeno Relish smeared on the eggs.  Just be sure you've got a cold beer handy.

They sit out on the counter at most bars I've ate them at.... don't see why you would need to refidgerate them at home??? Atleast not after they have been given a day or 2 to soak in some of the brine.  :dunno:

eating breakfast at the Raging River in Fall City Sunday- barkeep was making tons of bloody mary's for some reason- I spotted the peppercinni(why I can spell that?) jar about empty- I asked if I could have the juice- made out with a 1/2 full jar of juice and a few peppers. gotta boil some eggs tonight....

i think food posts are almost worthless without pictures. I did my eggs a little differently. I misjudged how much juice I'd need and over killed it. Went to the store and bought another 18pack of eggs. I used pepperconi juice, soy sauce, some pickle juice, red onion, dill pickles, carrots, big can of minced garlic, two cans sliced jalepenos, two cans of green chili peppers whole. Seasoned with Calvenders, pepper and salt. Smells wonderful, juice tasted awesome dipping fresh egg into it. Can't wait for them to sit a couple weeks. Tough getting a decent picture...(note Elk is on loan because owner cannot fit mount in his new house)

Oh I'm gonna do a batch after reading this but i just had a thought of the smell generated from all the guys on here after they made theres and ate em and got a little queasy.    :chuckle:   Get about 6 to ten of you guys together with your recipes and have you come to my house and peel the paint off the walls with your gas!!   :chuckle:

My wife loves them.  Her recipe is the one I use all the time now.  It's the one I posted.  I was going to suggest a HuntWa pickled egg taste-off, but that might not be such a good idea.  At least not at my house.

Alright after this post i wont keep gooing cuz it's supposed to be about recipes but back when i was in highschool i had eaten a bunch of pickled eggs and a bunch of peppercini peppers and stuffed mushrooms, was at this kids house with some buddies and i didnt care for the guy cuz we were after the same girl, geting to the point i went into his bedroom and ripped about 4 or 5 gag a maggot farts right into his big  fluffy down feather pillows and comforter and fluffed em lightly back out. If you have ever done this you know the smell will retain in that pillow for hours if you do it right. So an 30 minutes later he slips into his room with a girl for some action they fall on the bed and baaang!!! Chick screams and runs out and he's spitting on his own carpet trying to get the taste of my brand out of his mouth !!!      Will  :chuckle: :chuckle:never forget it ever i was laughing so hard i almost passed out from not breathing..

A friend of mine came over and we just tried my batch I made a couple weeks ago.  I must say I was excited about it until I opened the jar.  Man it smelled bad!  The egg smell was over powering.  Once I got one of the eggs out and stood away from the jar, I tasted them and I have to say it wasn't bad.  It had a lot of pickled olive taste to it, becuase that is one of the incredients I used.  Have anyone of you had a problem with the overpowering smell?  One good thing is I haven't gotten gas from them.............YET :chuckle:.  John

eeehhhh - no? rotting eggs smell like rotting eggs not pickled whatever you used? don't waste food and clean your plate. Report back tomorrow after eating 4 or 5. hahaha.....

You might not have a high enough vinegar content.  Should not be smelling like eggs at all.

hahaha    that so vicious.. gotta be terrible to lay your head down and start gagging..      classic..   belongs in the old upperdecker category...  Upperdeckers however require a whole lot of cleaning should you fall victim to one.

Made a new batch last night. Drained off some of the jalepeno juice and replaced with Franks hot sauce. I love that stuff. Can't hurt an egg, I wouldn't think.

TTT. Yes, this thread is super old but after four years maybe there is some newer members with killer recipes. I love  pickled eggs! Also wanted to see if anyone got divorced because if this thread... :chuckle: :chuckle: :chuckle:
