Goose sausage

Just finished the first batch of goose bratwurst. One is just bratwurst the other is habenero brats. Will post pictures after smoked and sealed.

I think I would go for the habenero, That looks sooo good. Must have been a good year. mine always ends up as jerky.

I did a 50/50 pork to goose ratio. Jalapeņo is a favorite, just wanted to kick it up a notch!
