Pickled Brussel sprouts

Anyone here done anything with canning brussels? We bought a jar in Sisters a while ago, first time I’d seen them, and loved them. Made up 6 pints tonight trying to replicate them. They were more like a bread and butter pickle than a regular one.

Ok @Fastass350 what’s your pickling recipe?

You got me, all I’m thinking about is pickled sprouts.🤣

Well I just opened a jar.  I know they should sit longer but so far they're good, though I think I'll play with the recipe  They are a little too vinegary for me and not at all like bread and butter like I hoped.  And they could use more spice, maybe a Jalapeno or a Habanero. 

Here is what I did, keep in mind I was winging it.

3 pounds of brussels, cleaned and cut in half.  I blanched them (actually poured boiling water over them) and let them sit for 5 min

In the jars I put the following before adding the brussels and liquid.

1/4 teaspoon each of;
mustard seed
red pepper flakes
peppercorns

1/8 teaspoon turmeric
couple whole cloves
1 bay leaf
couple whole garlic cloves

For the brine;
3 cups white vinegar
2 cups apple cider vinegar
1/3 cup salt
1/8 cup sugar

Process for 10 min (or 15 for higher altitude)

This made 6 pints. 

Let me know what you do and how they turn out. 

As I sit here and the flavors are marinating in my mouth, I'm thinking of not doing the apple cider vinegar next time, and adding water (just realized I didn't add water) and more sugar and a little more salt.
