I can't help you with the canon software, I use Lightroom. Best investment in my limited photography experience yet.
I was just bored so i played with your flower picture in photoshop.
Per the canon guys you want to use the canon photo pro software in your initial raw workflow. canon does not share their algorithms with adobe etc. The comment was that the canon software will do a cleaner job sharpening, exposure editing etc. (personally I think the HDR in photo pro does a better job)Lightroom is good for cataloging and doing batch edits, and cs5 for working with individual pictures, and elements is a light version of cs5.

I use CS for everything, including RAW worklow, its excellent.
