venison Kelaguen!

its been a while since i have had some and for some reason im craving!! for those of you who dont know what it is, it is a finger food of thin sliced raw meat mixed with spices and lemon juice. the lemon juice cooks the meat with acid instead of heat and kills the bacteria by bringing the meat to a ph level that food born pathogens can't survive in. so what you are left with is extremely tender meat in a spicy lemon marinade that go well with beer! :drool:

Sounds like ceviche but with red meat instead of fish.

its just like ceviche! same process! i dont have a recipe but you can look them up. im gonna give my buddy a call and find out how he makes it so i do it right they way they do in guam.

Buddy down in Oregon turned me onto a similar recipe with vinager! So good! I think it was called Finlandia or somthin.
Slap some bacon on a biscut and lets go, were burrnin daylight!
