Hey guys, thanks for all the help. My brother in law is going to help me get it all straightened out. He's a wild game butcher and a sharp dude, so he should be good advice.

Congrats on the bear! Glad all worked out to get the animal skinned and cooled down. The meat should be just fine, glad you got some ice on it! Using a stick to open the abdomen, where you gutted the animal, helps release a lot of heat.

Wait until he shoots a bull. He might think it's bad as soon as he walks up to it.
Just remember with any game, especially on hot days, get it cooling down as quick as possible. Keep it clean and get the hide off. I helped a guy out, who's meet started turning green, cut the souring meet off, separated that meet and wiped down the blade of the knife after each fillet of meet we removed. I was able to save most of the meet for him. The green can spread very quickly, so only use this approach on stakes and keep it away from any grind. A butcher won't touch it, if it spreads across the animal usually.
