I always steak out one salmon per year just to remind me how much I prefer fillets and tonight is out salmon steak night. I was just curious how the rest of you prefer your salmon.
I quick Big Quil. report. Lots of small fish moving and as soon as the snaggers are done the fishing gets better. Had to release six fish legally hooked today because of hooks or snag marks on the fish.

Generally fillets in our house,but blackened steaks every once in a while is really good also.

We just finished the steaks, nummy as they were, we are fillet people for sure. Just don't like fight the bones.
Hopefully Whidbey Island treats us good this weekend so we can enjoy some more lovely fillets for future good eats.

I prefer steaks. They grill up a little better to me and have great flavor with all the skin and bones still attached. You can also season both sides of a steak. I think they have a little more sexy presentation as well.
Fillets are a little easier though I agree.

I fillet all my fish. Then decide from there if I want a fillet or a steak. The best boneless salmon steaks are made from fillets. Simply lay the fillet out and slice every inch and a half, with every other cut piercing the meat only. Same principle as cutting butterfly steaks out of a backstrap. When you're finished cutting the steaks, simply fold in half, skin side in. Boneless salmon steak. If somebody wants a fillet, and others want steaks, only steak half of the fillet. No better way in my opinion.

I fillet most of them, but like that steaks are a uniform thickness and easier to cook evenly, grill marks look great on steaks.

I fillet almost all my salmon except for big kings. Those I steak out.
I prefer to smoke/grill fillets, with 20 minutes on smoke and finished off on the grill.
