Brisket Flat Q'ed for dinner

I have never done just a Brisket Flat before.  I have always done the full Brisket.  I was in Wal-Mart and they were having a sale on the flats.  I thought I would pick one up and try it for dinner tonight.  This is a 5 1/5 pounder.  It turned out pretty darn good for just being a Flat.  Moisture was very good and the taste was fantastic.  I used a 50-50 mix of Oak and Apple wood.  Thought I would share a few pic's with you........John

Just after being rubbed down and injected.


Getting ready to be foiled after 5 hours of smoke.


Pulled to let rest before cutting.


Just cut her up and it's time for dinner.  Have to run and get my beer.

Thanks guy's.  It sure tasted good, but I don't know if I will ever do just a flat again.  I'm partial to the whole Packer Brisket because it has a lot more marbling in it and the flavor is a lot better than a flat in my opinion.  Besides the flat didn't last very long for sandwiches because it was a smaller cut of meat and the family ate all of it before I was able to get a sandwich out of it.    At least a full Brisket you have a couple more days of left overs. :drool:

what temp did you smoke at?
I smoked at at 230 on my pellet stove with 50/50 mix of Oak and Apple.
