Apple Smoked Elk Roast

Hello Everyone

Today I did two Elk Roasts and some Crab Stuffed Mushrooms some taters and some corn I used Apple for the smoke I used Montreal steak seasoning for the rub on the small roast and red pepper and garlic rub on the bigger one
I did the Mushrooms with pepper jack cheese got the recipe online and used what I had around the house to stuff them These really turned out good will be doing them again
I also did some spuds and corn but did not take any pics of the vegys everything turned out Awesome

You've got my attention!  What temp did you smoke the roasts at??  I have a couple elk roasts left over and have been trying to come up with a new way to cook them up.  Gettin tired of the old crock pot.

I did them at 250 until the meat temp was 140 then let them rest for 45 min before slicing took close to 4 hours to do them

Nice color and a great looking roast!  I like apple for smoking, puts a nice touch on what your smoking.
