Elk Jerky

So I am trying my hand at some Elk Jerky. I have a Lil Chief smoker that I plan on using and I am only investing 4 pounds of shoulder roast in this endeavor. I am using the "High Country" Twisted trail 3 pepper kit. I have the meat seasoned an in the fridge. The instructions say to cure the meat for at least 4 hours, and preferably overnight. Well I have to go on shift tomorrow so I won't be back until Wednesday morning. Is there any harm in letting the meat cure for essentially 2 days? Should I just go ahead and go for it this evening?

Also, I am using the High County seasoning mix because it was the only only one that looked good at Sportco. Anyone else have thoughts on better spice and cure packets?

go ahead and let it sit in the fridge for a couple days it will be fine and all the High Mountain seasonings  are good for Jerky and sausage also Uncle abes Jerky seasonings are good from the sausage maker

Hi mtn is good stuff for a pre-mix. I love the garlic pepper. Have almost every flavor they make. Going to use their jalapeno sausage mix this weekend.
