where can you get everclear? The max I've seen at WA liquor stores is 151 proof.

There is a liquor store north of me.....in Lynnwood across from Seaview Chevrolet....it is a little hole in the wall non grocery store place. I went in...the dude at the counter said hell yes we have it...the good stuff too! Just like that. Cost about $31 with tax out the door.

I wonder why not just use cider. I love apple cider wonder why mix in apple juice. I have had a half gallon at home waiting for a cold rainy day to make some up.

You could......Like any recipe there are lots of variations.

I'll tell you what.....just making it made the whole house smell awesome. The only sample was a lick off the spoon. Pretty tasty and I'm hoping the taste of the booze fades a bit as it mellow. What I did that worked very well was put a layer or two of cheese cloth, a paper towel, then another layer of cheese cloth. We poured the brew through this and into the jars. The straining worked perfect.

It does mellow.  I use a different recipe.  The stuff I took to elk camp was a year old.  Took 6 quart jars.  Brought none home.  Shareed a couple with an adjoining camp the night before the opener.  None of them left camp before daylight.  They slept in for some reason.   :rolleyes:   This stuff can be a sleep aid...

How long do you guys let it sit before sampling? I've got ours in a fridge chilling.....a few weeks? Also..I left a shard of cinnamon in the bottom of each jar for kicks and giggles.

I made a batch 2 days ago of a spin off that I make.

Did not go threw all of this but make sure when you add the booze, it is room temp or cooler. If it is hot it cooks off some of the booze and can taint the flavor.

I use cider for mine as well as honey. 2 of the big differences over how most people make it.

Roger that on it being to hot and adding the booze. It was cooling and I started to pour....it was very clear that it wasn't ready....let it cool down a lot more, then added. No bubbling or cooking off. With the 180 proof I wasn't worried about cooking it off....just tainting the flavor.

You can drink it the next day.  Remember, it does improve with age. 

Here's my recipe in case you were interested.  Very simple to make.

Simmer for 20 minutes:

1 gallon apple juice
1 cup brown sugar
1 tsp. apple pie spice
1 tbs. vanilla
3 cinnamon sticks

Let cool to room temp.  Strain into another container.  Add the following booze.

3 cups everclear (190 proof preferred)
1/2 cup gold schalgger
1/2 cup buttershots


Of course you can scale up the recipe to however much you want to make.
