We brought ours to a good rolling boil, then turn down to simmer, let it quit boiling and cool slowly, with the lid on the stock pot.    :tup:

Made mine last night, just sipped some for a test. Wow super good, I will use less sugar next time though, as I used posters recipe with 179 proof home made small batch good stuff.  :tup: :tup:

I used just Lattins apple cider and a pinch of brown sugar with 190 everclear on my last batch. Still plenty sweet I won't add any sugar next time, and a little more everclear. I had a half gallon and only used half of it. Its good stuff but unfortunately doesn't last long.

Not for the average joe, but for small scale distilleries like 'yours'.

Permit is cheap, but hoops that must be jumped thru are a-plenty!

We are doing batch #2 tomorrow.....going with cane sugar, 180 proof....all cider and no juice....but adding some salted caramal flavoring as well. We have a sausage fest get together on the 29th of December...going to bottle this batch up in growlers and break it out for the evening.


How did that batch turn out H20?

Just finished batch made with 2 gallon apple juice, liter favorite grain beverage  ;), and a fifth of fireball. Wow nice bite, like it. Now to see what time mellow will do for it.

I use basically the same recipe but my batches call for 750 ml of everclear AND 750 ml of vodka. I also put in some nutmeg and honey. Get great reviews every year!
It's a sipper, not a drinker!
Next batch I am going to substitute the apple juice for apple cider to see how it that goes.

Got a batch sitting on the porch cooling down now. Used Carp's recipe minus the honey. Ended up with 1.5 cups of white/brown sugar. Don't know on the booze level yet.

Carp, how do you keep the stuff wrapped in filters? Thought about using string but was afraid of adding unwanted taste.
