So i tasted my moonshine after letting it sit for about 2 1/2 weeks, and it noticed a bitter aftertaste, which wasn't present before. Anyone know what caused this? It's been in the fridge and i left cinnamon sticks in the jars. I took out the cinnamon sticks right after tasting it and put it in a dark cabinet to see if that helps at all.

  Did you sanitize your containers before filling them with the apple pie?  Is there excessive sediment in the bottom of your containers?  Did you notice that the containers sounded like they were under pressure when you opened them?
  The reason I'm asking is there is a possibility that you got a wild yeast in there when you sealed your containers.  Any of the things I mentioned would be signs that some sort of fermentation continued after sealing your containers.  That wild yeast will produce a taste like you described.

  A wild yeast will taint any homebrew or wine.  Most of the time the taste is not good.  However, that is not a 100% thing.  As far as your Apple pie goes, I would see how it ends up before you toss the batch.  Also, This may not be the case with your batch, but it sounds like it.
  If you decide to do another batch, it might be a good idea to use a sanitizer bought from a homebrew shop that is specifically for cleaning a container prior to fermentaiton.  If you need a suggestion of where to get this I can provide one.

Thanks for the help. I'm going to see how it turns out after leaving it in the cabinets instead of the fridge for a few days. It'd be great if you could provide me with some links for the sanitation things.

Where is everyone getting their everclear??  I cannot find it anywhere....  I am not a huge drinker so I need help with a substitute grain alcohol.  Can someone use rum, like bicardi 151??

You can get everclear in wa now. I did and used it on my last batch of "pie" 190 proof. Just call around to the local liquor stores to find it. Not all stores have it. I suggest you buy the 1/2 gallon jugs if you plan on making a decent sized batch.

I put mine in the frig.  To me it taste even better cold but I also let it age.  I have a couple jars from last year.  Cracked one a couple monts ago  :drool: damn good.
