getting ready for the big day Thursday I decided to make some sausages for the big day I did a ten pound batch of snack stix and a ten pound batch of Elk Landjagers only took pix of the landjagers tho
I used Pre mixed seasoning from PS Seasoning and mixed 50/50 elk and Pork butt  mixed in the seasonings and cure stuffed into hog gut and pressed them between two cutting boards and placed into the fridge for two days to cure and form into the square shape it works ok I then smoked them using hickory

happyness is a full smoker

Nice!  I need to learn how to do that!  I just recently discovered Landjaegers and am addicted to them.  I want to make some out of whitetail and pork.
