i believe the way it works is that the white meat fish are all natural to the frasier river in B.C. i might be wrong.

My brother explained it to me as he is in the fish buying and selling market. Lined fish or naturally caught ones that is. He explained the whole mutant thing to me, but I don't remember. I was more interested in his explanation of how they tasted better. I thought he was nuts as I thought the pinker or more orange the meat the better. NOT NECCESSARILY true.

The "white meat is better" is actually a marketing ploy brought on by commercial fishermen who used to have to throw them away as the buyers didn't want them.

You might be right. After the amount of beer I had to drink, I probably could have had white meat or dark meat and woudln't have noticed the difference in fish flavor.

Beauty fish, hope I'm that lucky next week. The meat coloration has little to do with genetics, more to do with diet. Krill and shrimp eaters have red flesh when their primary diet is crustaceans. Kings that eat primarily fish will be whiter. My guess is fraser fish feed on more fish to attain the size they do by staying out at sea longer which makes them whiter. More pelagic fish like Coho are redder as they are somewhat smaller, schooling fish and can feed more on the krill than larger Chinook can.

I think you can taste a difference. There is nothing better than a winter-caught white blackmouth. I think I read somewhere that white kings have higher fat content than normal red kings, and that kings in general have the highest fat content of all the salmon species. The white is the best ofthe best.

coon...alls i know is that humpies are starting to show. there's a couple humpies rolling around in the snohomish but not enough to get worked up about. kings are closed and i haven't heard of any silvers yet, but they ought to be soon.
nyhunter...you know the drill. pack the girls up and head west, young man. wait for the right time though. that fish is from the salt.
