This was a response to a member, and felt need to post it (but more in detail).

I built my first salmon smoker at 12 and I have been addicted since then to cooking grilling & smoking. I have built over 50 smokers easy, probably close to 100, and most still in use ranging from extravagant to budget. I LOVE smoking meat. I was a chef for several years at a first class grilling joint when I was younger & have fine tuned those skills over the last 30 years. Its been a passion since. I would take on bobby flay any day without thinking twice, because I know what Im doing, not because I am arrogant. If you were on my facebook you'd understand HA HA!  Its ALL about meat. a number of members are on there and will tell you near every night in our house its a cook fest of what i can make happen, its just a passion and love for good food with whatever i have at my disposal, sometimes fine cuts & sadly sometimes broke crap turned into cuisine. I'm not a rich man I'm just creative and daring. I start thinking about what im going to cook for dinner before i leave for work near everyday, it truly is, just part of me  :dunno:

i have built and used so many smokers and grills, and done so much cooking, smoking, & grilling, i have pretty much seen, ruined, succeeded and cooked it all, so when it comes to problem solving i try to help if i can, so if a question is posted i WILL respond. its just who i am  :dunno: sorry man no google here just answers from tried & true experience, if you doubt that there are members here that have known me from other boards for many years, hell me and Dogtuk have been reading each others recipes and tricks for 5-10 years easy on other boards, I am not new, just to huntwa.

Well, as soon as I started posting answers I started getting (on some days) about 10 + pm's a day asking for help so i started responding to threads more & posting tutorials to help others enjoy it. There is nothing worse then dropping $75+ on a nice grilled dinner & it disappointing the ones you love  :tdown:

anyways if i appear to be a know-all-all im sorry, TRULY, I never mean to come off that way, just trying to offer solid answers to folks  :( I work damn hard for every dollar I make and when its wasted on a dinner thats ruined or meat I worked hard to get and its ruined, its disappointing to all. so i try to help, nothing more. if i knew how to kill deer in 3 seconds Id share it, but i dont, so i share what i am good at  :dunno:

well, we all have our haters, and a few people have told me i was wrong. I tend to be very proud of my knowledge and told 2-3 members to take a flying leap in those cases because i am very confident in my abilities & knowledge  :-[  it appears i have ruffled a few feathers by telling a few doubters to take a flying leap not so nicely, for that I apologize.

I love this site and will try to NOT post so much info and advice, and not sound like a know it all, I truly am sorry I never meant it that way so i removed 73 of my replies. I really dont know it all I just share what I DO know.

KC,

   I think your a swell guy. And I'm quite sure your a great smoker hand. Prolly could get as close to Arkansas bbq as I could get up here in the NW. You have said a few things that kind of rub me wrong, but nothing was said to me personally or indirectly. But it's all good. We all do it.  But it's pretty big of you to apologize, publicly. Takes a big man, for true.It's good to take pride in a skill. But we all know pride hurts in the long view of things. Good cooking, and an even better '13 hunting season to you!

I wouldn't take things so personally here. Let people think what they want to. But you know for yourself what has worked and what hasn't. You are only speaking for what has happened to things you have tried. I would rather get some information to what I am asking than know nothing at all.  If your wrong your wrong but if you are right you are right. If they don't know and get upset about info you give out they can just go ahead and try it for them self.  :twocents:  I personally wouldn't apologize for anything.  :twocents:

I have been offended by several of your posts......   especially the ones showing the finished product coming off the smoker.

How can you make that stuff look so good and not offer me any?   Really?!?!?!?!?!?

It is very hard to write something to someone and get your meaning across if the don't know you personally.  People read things a certain way and a lot of times it isn't the way you intended.  You are a wealth of knowledge in the smoking and grilling on this forum.  I greatly enjoy reading your post.  Hey i have even ruffled feathers on here before.  Don't let it bother you.  People are who they are.  Continue to post good cooking and have a great 2013.

  I been messing around with smoking meats and half assed BBQ for many years and one thing I know is you can never learn to much, please keep posting  the tips and photos of good smoked meats, I finally broke down and built a smoker this last year with some of your advise and in the last year made well over 400 pounds of summer sausage and as much polish, im still working on the pork butts so keep the tips coming.

If they don't like your posts they can choose not to read them. There are alot of them on here that I choose not to read weather it's someones daily journal or someones political rant. Don't take it personally just proceed as is, if it's a problem the mods will let you know thats what they are paid for!! :chuckle:

Definitely keep the smoker tips and pictures coming Kracker.  I have learned a lot from your post about smoking...oh yeah keep the pictures coming and the information.

I've found several recipes on this forum that I've tried;  some goood & some not so much.   Nobody made me cook them. 
My family enjoys me cooking and experimenting with new things. 
Today is crock pot pulled pork samiches  :drool:

I've enjoyed your posts and topics and I'm still looking forward to the cook-off!  As some have stated and honestly, they should take their own advice as well, if you don't like it or want or care to see it don't open it and read it or comment in it.  Don't let anybody get you down and keep your head up and let your actions, not words, speak for themselves.  I don't always smoke out so when I see your threads/posts of meats it gets me all riled up for spring, summer and fall!  I think bones advice was very solid and just keep moving forward. :tup:

well bone, I never thought in my wildest dreams calling someone a newb would cause such a ruckus, I see members called 10x worse daily and they are not mnade a huge spectacle of, I am quite humiliated by all the inflammatory remarks about me to be honest  :-[

i was called a putz and that was not made a spectacle of
one of the cooking threads was hammered off topic for 2 pages not one reply on topic, i clicked "report to moderator" 2x, nobody cared
i too have been called a newb here many times concerning hunting, nobody cared
i have had several members call me a know it all, one via pm
i have been called worse, nobody cared

is being called a newb really a bad thing? a insult? worth crying to mommy over? i dont think so but then again i have thick skin and can take it i guess.

so yes i was quite taken back after i was hammered so hard by so many members over one post, yes i know its unfortunate I fell into a witch hunt and was used as an example, fine if it betters the site so be it  :tup:

I GOT THICK SKIN I CAN TAKE IT, ........BUT.....but for future sake, maybe those jumping on others being rude should not switch roles and suddenly play the victim when they have succeeded in offending someone or insulting their integrity. mods should tell them "buck up sissy you started it dont whine to me"

But in the future i will not respond to the insults at all,  Ill just click the tattle tale button, which feels quite unmanly to be honest, but, I promised bearpaw i would and im a man of my word because nto one member on here is worth losing my right to post and stay here, sorry guys no love from the kracker  :sry:

I appreciate the support of all members thank you all very much, between this thread and the PM's I will continuing doing what I do best, making good food, and answering questions when I see them. If someone dislikes me enough to want me gone, well I'll just leave that to the powers that be and if I disappear then ya'll know who to speak to about it  :tup:

I actually look for you posts  :tup:  I have a passion for good food (especially bbq) and will be buying or building a good smoker this spring.  I know absolutely nothing about smoking meats, except I like it, and have gleaned a ton of info form you post. 

Keep them coming!!!!  or make sure your PM stays clear so when I start I smoking....I can pick your brain.
