Has anyone ever had pheasant sticks or peporini made? I have about 35 in the freezer and was thinking about calling a butcher or two.

If you have that much you should trow a dinner party and invite some of your friends especially any that don't hunt. I have several great recipes that are sure to please the palate. My wife's favorite is this... Crank the oven up to 325 bake place pheasant in 9x13 baking dish aprox 2in in deep. pour cream of mushroom soup over the top. Bake for 35-40 min make a mix of white and wild rice. We get our wild rice from Costco.. As the meal is finishing and your guests are there. Take a bottle of red wine(whatever you are drinking)  Pour some into a sauce pan jar of Current jelly(you can substitute other jelly if necessary) and Frenches yellow mustard. Bring to a foaming froth and whip with a whisk until all ingredients are dissolved.  Serve the pheasant over the rice and you can either have small dipping cups for the sauce or a gravy boat to drizzle over the meat. Guaranteed to please.  This recipe can also work on duck.

I respect your right to do what ever you want with your birds, but you do know there are better ways to ingest pheasant than pepperoni right?
you don't see much chicken jerky or pepperoni on the market, besides pet treats... just saying.

Concur on way too good for pepperoni,Make some great appetizers cube breasts into bite sized cubes,marinate in wishbone italian dressing,wrap with bacon and broil for 7 minutes,remove from oven,place a piece of provolone cheese over toothpick and re insert to oven for 1 minute. They are really good And it seems they are the first appetizers completely wiped out at gatherings.

That's all good and dandy if you only have a few, I have around 40 in the freezer from some group hunts and dog training where no one wanted there birds so I am taking 30 to get made into jerky. Sounds like the peporini is more for ducks and geese. But the jerky should be great

what about sausage? I had some pheasant sausage that was stuffed with apple and some type of cheese that was just amazing.

You can make pepperoni or sausage out of anything and it'll taste good.  Just think of what goes into a hotdog  ........ and i still eat them, lol

I totally agree.  However, if you go this route, they are very good.
