Soaking yer Chips

To soak or not to soak chips...that is the question.  What do most of you Smokeaholic's do and why?

I soak and put them directly on coals, but I am also using a weber instead of a smoker.  One time that I used chunks, I didn't soak those.

Somewhat the same, I soak when using indirect heat over coals (Not an offset). I do not soak when using the offset smoker.

No soaking here as I use a chip pan.  Like KC said, I don't care for the steam that it creates.

once you pull your meat out and see that its covered in nasty wet stuff (someones gonna have fun with that sentence) and watery goo from the smoker is dripping on it too, you wont care for it. like they said on charcoal sure the heat kills the moisture, in a smoker i wouldnt ever, im trying to DEHYDRATE and cure the meat not moisten it

I soak, Big Chief smoker with a pan, but I do it because it says to... never really considered not soaking.  Now I gotta try that.  Oh wait, that means I need something to smoke.  S'cuse me, I gotta go check the fridge/freezer/backyard.
