Crawdads

Does anyone have good recipes for crawdads (crayfish).  Ive boiled and dipped in butter, is there anything else I can do?  Any suggestions would be great!

They are great for bait and that's about it, IMO.  ;)  We use to boil them just like crab with a little beer and Johnny's in the water.

I love the suckers if they are large enough. Anything you can do with shrimp or crab you can do with crawdads.

Sprinkled with Jamicame Crazy seasoning and butter, yum yum....  Was in Alabama for about eight weeks once, oh my goodness, I couldn't get enough of them crawdads....  They were so good...  Where do you get them around here????

You can't get them in Washington. ;)






Actually, just about every lake or creek in WA has crawdads.  Just get a crawdad trap and bait with bacon and toss out in just about any creek or river and you'll catch them.

Crawfish Creole


Ingredients:

 2 lbs peeled cleaned Louisiana Crawfish,
½ cup chopped green onions,
½ cup chopped bell pepper,
 2 chopped celery stalk,
 3 minced cloves of garlic,
8 oz tomato paste,
16 oz can of tomato sauce,
 1 qt of water,
1 stick of butter,
 Creole Seasoning,
 1 T crab boil concentrate

Directions:

Sauté veggies in butter over low heat, add tomato paste and tomato sauce, 1 qt of water, crab boil concentrate, add shrimp and cook until done. Creole Seasoning to taste, serve over rice.

Saute and season and add to Pasta Alfredo! They rarely make it out of the pan to the noodles though.

I just boil 'em 'til they're bright red... add some fresh pressed garlic from the garden and some new baby red potatoes....YUM. :)

If your in a need for Mudbugs which is what we call them or Crawfish you can order them next day air from New Orleans Seafood in New Orleans, LA. They are inexpensive and man are they fat and purple, we used to order them when we were up north 50lbs about $90.00
