Do you use a sausage stuffer or do you use your meat grinder for stuffing?

I have had issues getting meat grinders to work with stuffing.

You are killing me man!  I discovered landjaeger last year and it had become my favorite.  After spending a ton having deer pepperoni made for my daughter, I really want to learn how to do my own landjaeger and pepperoni this fall.  I would love to try and make some elk landjaeger!

Do you use a sausage stuffer or do you use your meat grinder for stuffing?

I have had issues getting meat grinders to work with stuffing.

Usually I do use a grinder to stuff. Only had issues a couple times. Just make sure to take out the plate & cutter and you should be fine. If stuffing smaller casings use the high speed auger.

Thanks for the compliments. Truth be told…….I don’t like it.

I had my son, wife and brother try it and they didn’t care for it either. I am not sure what it is. I knew it wouldn’t taste just like store bought, but I couldn’t eat it.

My wife and son just weren’t into the flavor. I could almost taste what I would describe as a “metal” taste. Kind like biting a piece of foil. My brother had a similar response.

I gave a sample to a couple coworkers and one said that it was good and another said it was great so they both got big bags of lj the next day. I sent the rest to my wife’s family in Pasco.

I don’t know if the spices/salt/cure and cookie sheet had some chemical reaction or what, but I have never made sausage that no one in my house didn’t want to eat.

There is a spics that is heavily used in landjagers and I cant remember what it is but I wonder if it that spice you may be talking about . The guy that made mine cuts that certain spice in half. ??

We are our own worst critics. I've made some pretty horrible sausage that other people liked as well as some awesome stuff that others didn't care for.  Although it's a pita, I do 2.5lb at a time for new recipes.  Maybe your family is just used to perfection by now?   It looks good from here though

I hear ya Mossy and I agree that we can judge ourselves harshly when we are accustomed to a certain level of success or quality, but damn.. I was disappointed.

This looked great, felt great, smelled great and even the bite was great, yet I couldn't handle the harsh aftertaste.
