I dry canned my first jar of Talapia and Rainbow trout last night. This morning I took it out of the pressure canner and it looks absolutely amazing. I am so happy with the results.
I just had to share.

Looks great? What about taste? Some of my worst memories and mistakes started with that looks great, looks good, do able..........

we will find out about taste and texture when opened. It's canned currently and won't be opened for a bit.
