Elk Calf, baby!

Better than USDA prime beef served on a gold plate by Kate Beckinsale (or your preferred wait person)

I had some caribou sausage when I was 15 yo that still makes me salivate just thinking about it.

I like it all.  But as others have already said, it depends on diet, field prep, how it was cut/cooked, how quickly it died, etc.  I have had moose, elk, deer (blacktail only), bear, antelope, and cougar.  The deer was probably my least favorite.  Moose and berry-gorged bear is at the top of my list.

A couple folks mentioned Dahl sheep.  I have heard from a few others who have tried it and they say it is the best!

Also a couple of you mentioned some African plains game.  A friend who has eaten most north American game and several varieties of plains game said the best meat he has ever eaten is Eland - hands down!

I am going to have to say mule deer for me, especially young mule deer.  Yummy...

Nuthin' like a stinky ol' blacktail in full rut. Marinated in a fresh bottle of doe in estrus straight out of the bottle.  Has a nice burn.....

Eland steaks medium rare, with a good bottle of red wine....

Elk is my second choice.
