that's just another thing to pack around.  no offense, but i just use wood sticks

  Actually I don't even use sticks anymore. No reason to gut an animal unless you are going to get it out whole and where I hunt that is not an option...... So gutless method it is!

Unless you have T-REX arms you should be able to field dress with no problems, and not be messy. 
And if you need to open the chest cavity like has been said, sticks work great....and are free....

i just saw an article on rokslide about that.  i may have to try that method this year.
