Rabbit Recipe?

After harvesting my first rabbit last night I got him skinned and gutted. I also put him in a saltwater brine in the fridge.

Anyone got any good recipes for bunnies?

Use your favorite chicken pot pie or chicken/turkey stew recipe. Oven bake till done, and pull the meat off the carcass and throw it in the pot with your stew broth and veggies.  You will love it!! Looked like a great shot on that bunny!

Fry it up like chicken

Brown the outside of the rabbit in a hot skillet with olive oil. Then braise it for two hours in aromatic veggies (onions, carrots, celery, parsley), red wine, garlic, and a little lemon juice. Serve with a brown gravy that you either make from the braising juices or a package.

We like it fried.  We bone it first, then cut the meat into strips like chicken.  Brown it with batter & butter.

Killing it with your bow is a huge step to liking rabbit. I never liked worrying about biting on shot. I usually hunted them with a .22 as a kid for this reason. Once some one chomps on shot, they never seem to like game anymore.

Rinse it, roll it in flour and fry it like a piece of chicken.

The slow cooker/crock pot is your friend.  We love bunny but have never soaked it in anything before cooking.  Look up haasenpfeffer (sp?) recipes, rabbit in wine sauce.

Soak in milk overnight

roll in flour and fry in butter

remove and de-glaze pan with white wine, lemon and capers

pour drippings back over wabbit

Lots of small game, liver and heart benifit from a overnight soaking in cold water and some table salt. Rinse it off and cook it. Draws out the blood and lessens the "gamey" taste.

I won't eat liver but I like the "flavor" that heart and bunnies and squirrels have, never saw a reason to soak them.     Of course, I eat some racoon too.

Me too........ I don't know how much difference it really makes but it DOES draw out the blood.
