Slow cook for about four hours (legs/thighs) or until tender.  Chop up onion, place in saute pan with butter, cook until about half done, add sliced apples (I like to use some soft and some more firm ones), cook until almost soft, add legs/thighs to heat, add currie and chile powder to taste, stir in a tablespoon of flour or more if large batch, add 1 cup of chicken stock per tablespoon of flour, stirring to prevent lumps, simmer for a short time.  Serve as finger food or over rice with a side of cold chutney.  The amount of ingrediants can be varried to suit your tastes other than the flour to liquid ratio for a good gravy.  This is absolutely delicious.  I even served this at potlucks while getting my masters in teaching at Evergreen State College and it was always a hit.  You can also add diced breast meat if you want to slum it a little and need to pad the meat content.   :chuckle:

Have you ever tried to eat those things loki? The thighs and legs are so tuff and full of tendons and ligaments their not worth the effort.

Try slow cooking them rather than deep frying with the rest of the bird.  Yes, deep fried, they can be tough and dry, but slow cooked, I like them better than the breast meat, the thighs anyways.  The thighs don't really have much for tendons just like a chicken's.

So wait! Who is making a "big deal" about this? There are only four comments on the link posted, 2 of which are by a hunter.....

Seems like it's a bigger deal on this board than anywhere by tree huggers that I can see....

I use most everything but the honk. Feathers go in a burlap bag to wash and store for pillows. Wings and feet go to a witch for Dream Catchers and roach clips that she then trades for stuff [Witch is her religion, not my opinion of her} Anything left over goes into the woodstove so the ashes can be tilled into the garden. It's not normal to be this obsessed, but I sure wouldn't leave them hanging on a fence or otherwise publicly discarded.
The first bird may get the worm, but it's the second rat that gets the cheese.
