I like a 90-100 degree smoke for 7-8 hrs. The last half hour I'll bump up the temp to 180 to kill any bacteria. Usually 2 pans of wood during the first half.

Thanks guys, I'm used to smoking with higher temps which only take about 1.5 to 3 hours. I heard the lower temps are better, can't wait to find out!

Yup same way I do it,120 for overnight, thin pieces around the edge and thick ones in the middle,I've got an outhouse sized box with 2  4 foot square racks,I hang the bellys by the collars. As the fish gets done I take it out, thin pieces. I use fresh cut green maple for smoke and remove all the bark with a draw knife, just chunk it over the burner and move it along the burner.
90-130, i usually run 120-130 nonstop for 8 hrs

I smoke Smoke salmon at 110 degrees, the secret to a good product is the brine, everyone has there favorite, mines a dry brine consisting of  brown sugar, salt and pepper, brine 48 hours.

If your smoking in 2-3 hours then your not smoking, your baking/cooking with a little smoke, and thats not the same. to each their own just an FYI.

I run my smoke at 80-100 degrees for 4-5 hours then up to 140 for another 4-5 hours.
