Snack sticks, cases 'rubbery'
« on: November 10, 2013, 04:08:06 PM »
Not sure else how to explain it, did it as the directions, will putting them in the fridge overnight firm them up a little more before vac packing?

They taste awesome, just the cases are weird.

updating, I put them in the oven for a bit, that seemed to dry them out more, incase anyone else has had issues wanted to have this up here. Noticed the cases turn dark color when they are dried out more

I am assuming these were collagen casings? If so, they may soften up again after freezing.

I think so? They are darker color like peperoni sticks.  They pop just right now, they were just too moist.

Thanks

How long have you had the mix? Best places for castings are in the fridge

The further one goes into the wilderness, the greater the attraction of its lonely freedom.
