clam fritter
« on: November 04, 2013, 02:37:26 PM »
With all the great razor clam digs going on I thought I would share my favorite fritter recipe
  1lb hashbrowns, frozen or fresh
  6- 10 slices of cooked bacon-chopped
2- 3 cups razor clams chopped in small pieces. I like allot but adjust to your taste.
  1/2 cup grated cheese
  3/4 cup flour
  2 eggs
  3/4 cup milk
  3 jalapenos finely chopped

mix in a bowl and drop a heaping table spoon full of mixture into hot oil in the pan. I love this recipe and I hope you will try it. What's your favorite fritter recipe.

Sounds good, what kind of cheese, seems like an italian blend might be better than a cheddar type?

I add diced onions, zuchini, mushrooms, peppers, garlic, etc. as well to my crab fritters.  Might be good here as well.

I usually put what ever I have in the fridge in. Most cases its shredded mozzarella or a cheddar. I haven't made any crab cakes but I will have to give that a whirl. I am not a fan of store bought crab cakes. I make a cheesy crab bread that's good. Get small loaves of a good sour dough bread. Split it like French bread, A little shredded Tillamook cheddar, a layer of cooked crab, some more cheese on top and broil it. Yummy.

I've done that with crab on the bread, it is awesome!

I put all of that into my fritter batter rather than a cake.

Are you mixing the hash browns in as well?
