Duck that doesn't taste like duck
« on: November 03, 2008, 09:15:32 PM »
Hey, I got a deep fryer for camp cooked more frys then anything else. I can cut up and couple potatos and a can of beans and I'm happy.
This is my first try at deep frying duck fillets, cooked them pretty much like fish with corn or pancake flour.
Now for the people who don't like the taste of duck, the ones the kids and I cooked did not taste like duck at all.
   YA LIKE LIVER :chuckle:

You probably overcooked them and that is usually the result in taste. There are tons of recipes on the net and I haven't found a bad one yet. The secret is not overcooking; they should be still pink in the center when you are eating them and remember that after you remove the the duck from whatever method of cooking, they will continue to cook for a while from the retained  heat. Believe me, if they tasted like liver, I wouldn't ever eat one; I hate liver.

I've deep fried duck once. It was NASTY!!!!! In fact that was the last duck I shot. Used to pop lots of ducks and geese but I finally got sick of choking them down.

I have eaten a lot of duck and some were a lot better then others. I like ducks like the large local park ducks the best.

But if you don't like duck no matter how you cook them they taste like duck.
 Not liver.

I've heard people say you have to clean them right way, soak them in what ever for a day or two. Hell they still taste like duck. Best thing to do is go with a person that really likes them. Some say if you don't like duck you shouldn't shoot them BS to that. If you shoot them just make sure they don't go to waste.
I know a guy that puts them in a freezer then when the seasons over grind them and makes jerky. It's good to me but I like duck.
Eat what you like and don't let what you don't go to waste. You have as much right as anyone to kill ducks.

I have the best method for cooking duck that tastes great.

Cut your duck breasts and into 1/4" to 3/8" wide strips.

Heat olive oil (or canola) to med hi in a frying pan and add one cube of asian curry (the kind found at most stores, it comes in a plastic tray and breaks up similar to a candy bar does)

Take the cube of curry and melt in the med hi oil. Add the duck and simmer (braise) in the hot oil. Lightly brown the duck and then add the rest of the curry blocks and water per instructions. Let the mixture simmer on med for 10 mins or so.

While the duck is cooking start some rice (white, instant or brown) whatever you like on another burner. When the rice and duck is done add scoops of rice on a plate and pour the duck curry over the rice.

This is just awesome and completly covers the muddy taste of the duck  :EAT:

So far i've found that the girlfriend but she did enjoy the wood duck last week.

Just get some shake n bake cut it the duck breast in strips and oven roost for about 20 minutes.

I love duck, a lot of people don't like it, but if you don't send em all my way  :IBCOOL:
That's why it's called hunting and not killing.
