Storing Summer Sausage

Okay cooked up my summer sausage now what :dunno: Wondering how long it will keep in the fridge before I need to throw it in the freezer.  Thanks,

Usually I only leave it a day or so in fridge before I vaccum pack it for the freezer. The fewer days in the fridge before freezing allows for a couple extra days in the fridge after opening.

after you pull it out of the freezer leave in the fridge for a day without any kind of wrap on it to dry it out sometimes it can get a watery taste if frozen for a long time just dry it out and it will taste fine

i have not tried the dried sausages yet i do make a great salami thats made with seasoning from the sausagemaker it is venison salami great stuff i add some cayanne to give it a little kick
