Deer/Elk dry rubs for jerky?
« on: December 15, 2013, 07:08:11 PM »
I know that everyone can go buy jerky rub and it isn't too expensive, but I am sure I am like everyone else and want to make my own.  The stuff I currently buy seems to have mostly brown sugar salt garlic and pepper.  Anyone out there willing to part with there tried and true?

A really easy one I use and tastes very good is just brown sugar and montreal steak seasoning. Probably has very similar ingredients to the one you are noting you buy. You can add spices to this too or sometimes I will add some teriyaki sauce.

Here's what I use on my roasts for smoking.

3/4 c salt, 3/4 c brown sugar, 1 T onion powder, 1 T garlic powder, 1/2 t turmeric, 1/2 t cumin, 1 t black pepper, and 1 t ground thyme

I have a note below my recipe that says add worcestershire sauce and balsamic vinegar and a bit of water to make it into more of a marinade for jerky.  It has been a while since I made jerky with thisw and don't remember the details of this addition.  Of course if you like hotter jerky, add hot sauce.
