Frozen belly, 14.8 lbs. kids thought it was gross that the nipples were still on it. Oops, can I say nipples?

ate at the bacon bar in vegas and they served the "cure", 6"x4" piece of bacon with grilled onions 2 overeasy eggs brandished with whiskey infused maple syrup...... :drool:  seeing your creation is making wish more some right now :tup: :drool: :drool: :drool:

Maple bacon with pink salt. The black pepper stayed on even when the brine was rinsed off. Not much in the way of maple flavor. Next batch is going to be more pepper for one chunk and more maple for the other. Love playing with tried and true recipes.

Looks great.  Has that slicer been good for you?  I've been pondering purchasing one as I can't quite pull the trigger on a commercial unit as it takes up too much counter space. (found one at an auction for 300 and almost pulled the trigger but talked myself out of it at the last minute.)

I used hickory on this batch. Apple is going to be used on the next. Pork belly going in the brine this weekend for smoking next weekend

Never tried a wet brine for bacon always dry  :dunno:   ;)

Slicer works pretty good. The handle that you hold to keep the meat pressed against the slice could use some work. Not enough teeth to hold the meat firmly. Works pretty good though. Bought this one from a member here.
