My favorite for wild turkey breasts is to butterfly them to about 1" thick, coat with a good german-style mustard and then spring honey-panko bread crumbs, flip and do the same on the other side.  Bake at 350 or so until done about 25-30 minutes depending on oven.

Good eats.

I dice it, cook in a little olive oil. Eat over rice with a honey mustard curry sauce. I do the same with grouse. It is really good.

Make a batter by mixing Kentucky Kernel seasoned flour
(http://www.walmart.com/ip/Kentucky-Kernel-Seasoned-Flour-10-Oz/10320836)
with 1 can beer and refrigerate overnight

Cube breast meat into nugget-sized chunks and put into batter about 1 hour before cooking.

Deep fry for 2-3 minutes in oil.

Eat =).

You may never eat turkey breast any other way, it really good and moist.

being a huge fan of appetizer style bbq get togethers I went that route with some turkey breast after last years spring hunt.

Turkey Poppers
Breast and any other meat you can get off the bird
cube into large bite size chunks
season the meat with a mixture of salt, garlic powder and cajun spice
halve and clean a bunch of jalapenos
put a quick pre-cook on the meat in the over (just a few minutes to get the meat started)
take meat, put inside one half of a jalapeno with just a dollop of cream cheese
wrap turkey/creamcheese stuffed jalapeno with one thick cut slice of peppered bacon and stick it with a toothpick
grill until bacon is crispy (not being worried about the turkey temp because of pre cook)

Enjoy a spicey little morsel of goodness with a cold beverage!

Grind into italian sausage, bbq boneless breast, deep fry, just don't overcook it and it's all good.
