summer sausage and snack sticks

Made 20# of summer sausage and 15# of snack sticks yesterday. Stuffed the summer last night and will stuff the snack sticks tonight. Had to use up some beef and pork since we will be butchering steers and pigs soon. Pictures to come once all is stuffed.

Just spent a day in Leavenworth and was reminded how much I LOVE CURED MEATS.  Need to get going on some sausage and pepperoni one of these days.
