Ground bear recipe

Looking for a good ground bear recipe. I've done only meatloaf so far.
Acts 10:12, “Get up, Peter. Kill and eat.”

Note: this recipe came off a meat rabbit site and it is wonderful. Tom

Italian Sausage
•4 pounds ground black bear (or preferred meat)

•4 teaspoons kosher or coarse salt
•1 Tablespoon fennel seed
•1 teaspoon anise seed
•4 teaspoons ground coriander
•1 Tablespoon black pepper
•1/2 teaspoon crushed red pepper (add more for hot sausage)
•1 1/2 teaspoons ground paprika
•1 Tablespoon dried minced onion
•2 Tablespoons roasted garlic mashed through garlic press
In a large bowl, combine all above ingredients and mix well with your hands. Cover and refrigerate for a couple of hours or overnight to meld the flavors. Use within 2 to 3 days or freeze for up to three months

How about a holiday meat pie? (Its not a cheese burger I know) or some kind of meaty pastry that you could share with your friends?
Did you render the fat? Ive heard it makes the best pie crust.

Makes good chili.

Brown the ground bear in skillet.  Smoke it for 1/2 hour with hickory chips.
2 pints soup stock
2 cans maters
2 Tablespoons brown sugar or honey
4 cups of dry beans, soak overnight first
1 large onion diced & sauteed
1/4 cup chili powder
Dash salt
Add water as needed.

Cook it in the crock pot while you're at work.  Yum.  :EAT:
