Are you the young guy who I was told by ShaneVG that does it for friends and family ? If so, I had some bear pepperoni that I ate with him and his Dad 2 years ago..........I want some.

When I make my summer sausage, I lay in in the racks, how high above the heat source do you hang it? I would love to do more in a batch!
