You have to let it sit for weeks before eating. Eating right of the smoker taste like an ash tray. I won't give any any of my evoked cheese until after exactly one month vacuum sealed rest in fridge. I personally will eat it three weeks after. The longer sir the better. The stuff you buy  in stores has rested a year. I just finished another 30 pound batch, mid Feb is when I will start gifting it away.

My birthday is near the end of Feb.......    ;)
So is mine. Birthday trade!

I'll bring you cheese in the fall and we can eat it together chasing those old sqauws and island deer.   :chuckle:
